Ingredients

  • 3 cups shredded, cooked iguana
  • 1 onion, diced
  • 2 cups mixed vegetables (corn, peppers)
  • 1 cup crema or light béchamel
  • 1 cup grated cheese
  • Salt, pepper, cumin to taste
  • Breadcrumbs or crushed crackers for topping

Instructions

    Combine shredded iguana, onion (sautéed), vegetables, crema, half the cheese; season.

    Spread in baking dish; top with remaining cheese and breadcrumbs.

    Bake at 375°F for 25–30 minutes until bubbly and golden.
