
Baked Iguana Casserole
Comfort casserole with shredded iguana, vegetables, and baked topping.
Ingredients
- •3 cups shredded, cooked iguana
- •1 onion, diced
- •2 cups mixed vegetables (corn, peppers)
- •1 cup crema or light béchamel
- •1 cup grated cheese
- •Salt, pepper, cumin to taste
- •Breadcrumbs or crushed crackers for topping
Instructions

Combine shredded iguana, onion (sautéed), vegetables, crema, half the cheese; season.

Spread in baking dish; top with remaining cheese and breadcrumbs.
