
Fried Iguana Tacos with Aji Amarillo Crema
Crispy fried iguana pieces topped with Peruvian-style aji amarillo crema.
Ingredients
- •1 medium iguana (use backstraps/leg meat), cut bite-size
- •2 cups all-purpose flour
- •2 tbsp Cajun seasoning
- •Oil for frying
- •4 tortillas
- •1 cup shredded cabbage
- •1 avocado, sliced
- •1/2 cup Mexican crema or sour cream
- •1 tbsp aji amarillo paste
- •Lime wedges, smoked paprika (garnish)
Instructions

Mix flour with Cajun seasoning; dredge iguana pieces.

Fry at ~350°F until golden and cooked through; drain on paper towels.

Stir crema with aji amarillo paste to make sauce.
