Fried Iguana Tacos with Aji Amarillo Crema

Crispy fried iguana pieces topped with Peruvian-style aji amarillo crema.

Ingredients

  • 1 medium iguana (use backstraps/leg meat), cut bite-size
  • 2 cups all-purpose flour
  • 2 tbsp Cajun seasoning
  • Oil for frying
  • 4 tortillas
  • 1 cup shredded cabbage
  • 1 avocado, sliced
  • 1/2 cup Mexican crema or sour cream
  • 1 tbsp aji amarillo paste
  • Lime wedges, smoked paprika (garnish)

Instructions

    Mix flour with Cajun seasoning; dredge iguana pieces.

    Fry at ~350°F until golden and cooked through; drain on paper towels.

    Stir crema with aji amarillo paste to make sauce.

    Assemble tacos with fried iguana, cabbage, avocado, crema; finish with lime.
