Grilled Iguana with Lime & Cilantro

Simple grilled preparation finished with fresh lime juice and cilantro.

Ingredients

  • 1 lb iguana backstraps (or sections)
  • Salt and black pepper
  • Oil for grill grate
  • 1 lime, halved
  • 1/3 cup chopped fresh cilantro

Instructions

    Season iguana with salt and pepper; oil grill grate.

    Grill over medium-high heat, turning occasionally, until cooked through (165°F).

    Rest briefly; squeeze lime over meat and sprinkle cilantro.
