Sopa de Garrobo (Iguana Soup)

Traditional Salvadoran soup with blended vegetables and fresh cilantro.

Ingredients

  • 2 medium iguanas (garrobos), cleaned
  • 1 bunch cilantro
  • 4 cloves garlic
  • 2 tomatoes
  • 1/2 onion
  • 1/2 green chile (bell pepper)
  • Salt and black pepper to taste
  • 2 L water

Instructions

    Boil iguana with tomatoes, onion, green chile, garlic, and salt 30–45 minutes.

    Blend a portion of cooked vegetables with some broth; return to pot.

    Adjust salt and pepper; simmer briefly.

    Serve with chopped cilantro and toasted tortillas.
